A Simple Meat Pie Recipe

Greetings all! How was your weekend? Eventful, or relaxed? Whichever, I hope you enjoyed it. Today, from our food blog, I bring you a Nigerian meat pie recipe. Many people feel that making snacks is too tedious and time consuming, and so opt for buying most of their snacks from fast foods and restaurants. Well, this may be true for some snacks but I think we exaggerate the truth. I'm a simple, "fast to cook-food and snack" lover, so anything that sounds remotely stressful, I conclude that it's a "long thing", and don't bother learning it. However, lately, I have noticed that many of the recipes I avoided are not that bad, stress-wise. I'm certain that there are many others like me out there and I hope this simple meat pie recipe will convince you of my claim. It can be fun making your own food and snacks; you can explore with spices/ingredients and add a twist to make it your own and of course, save yourself lots of money. Let's quickly take a look at the recipe, shall we?

Meat pie is a very popular snack in Nigeria. It is sold in eateries, hotels, hawked on the streets and served in some parties. It is a simple snack to make, it is just pie dough filled with minced meat and a few vegetables. Properly made meat pie tastes really good, I enjoy it more when it is still warm from the oven.

The inside of a meat pie should not be dry, it should be moist and well seasoned. For me, the filling is what makes a meat pie standout. The recipe I'm going to share today is one that is guaranteed to produce mouth watering meat pies. I hope you enjoy it.

For the filling

Ingredients
4oog beef, minced
2 medium sized carrots, washed and cut
2 medium sized Irish potatoes, cubed
1 stock/seasoning cube
1 medium onion, cut
1/2 tsp curry powder
1/2 tsp mixed spice
2 tbs vegetable oil
1 cup water, 250ml
2 tbs flour
1 cup water, 250ml

Method
Put the vegetable oil in a dry frying pan and place on fire. Fry the onions in the oil until the aroma is released, add the meat, stock cube, curry and mixed spice, stir until the meat is no longer red in colour.

Add carrots and potatoes, salt to taste. Pour in a cup of water, cover and allow to cook until the carrots and potatoes are soft. Mix the flour in a cup of water until smooth (don't skip this part, this is what keeps the inside of the meat pie from drying out after baking) pour it into the meat and mix well. It will thicken. Check seasoning. Turn off the heat and allow to cool completely.

For the pie dough

Ingredients
4 cups flour
1 1/2 cups Margarine
1 tsp baking powder
1 cup very cold water
A pinch of salt
1 egg

Method

Place flour, baking powder and salt in a bowl. Whisk lightly, add margarine. Mix well until it looks like crumbs. Make a well in the middle and pour in the cold water, mix until it comes together and forms a ball. Allow to rest for about 3 to 5 minutes, it will be a  little bit elastic. Break the egg, whisk and set aside.

Dust a clean work surface with a little flour, roll out the dough (not too thin and not too thick) and cut with a circular shaped cover (I use a big mug, I make my sizes small so my kids can handle them easily) Remove the excess dough from the cut one. Scoop some filling and place in the center of the cut dough, use a pastry brush and apply egg on the edge of the cut dough. Fold and use a fork to seal the edges.

Place on a baking tray lined with baking paper, or just grease the baking tray with margarine and place it directly. Use a pastry brush to apply the egg on the meat pie to give it a glossy look.

Bake in a pre heated oven at 170 C for about 30 to 35 minutes, or until golden brown. Your meat pie is ready.

Note
As with every other food, be very careful when preparing this. Someone I know found a piece of metal sponge in the filling of the meat pie she was eating recently.

Alright guys, there you have it. Please try this recipe and let us know how it turns out. If you have any special spice or ingredient you add to yours that makes it even more delicious, feel free to share it with us.
